So…it shocks me to say that our summer is just about half over already.
The boys head back to school mid August, so we are almost on the downhill slide into our busy fall schedule…
But since I said almost… we still have a lot of time left to continue doing a ton of this..
and lots of this…
…all in a desperate attempt to stay cool while the Arizona temperatures are supposed to hit 118 degrees for the next 3 days straight!
The heat has it’s perks though… We have also been using it as an excuse to top plenty of ice cream with our favorite Dairy-Free Coconut Caramel Bananas…
We are also licking lots of our Watermelon Slushy Pops … (and YAY for Mom who finally learned the hard way that these are best consumed outside)…
I am trying really hard not to host any pity parties over here as my all-natural deodorant is working overtime and being stressed to the max, but I will just tell you that I am feeling immense anguish and sadness for the torture that my garden is going through right now.
My poor poor pretty plants are trying so hard to stay green and stand their own amidst this ridiculous heat.
Note: this photo was taken when temps were in the 80’s and they were living large. I did not want to horrify you with what happens when they are barely clinging to life in the 100’s.
We are busy trying to harvest as much as we can of what is still struggling to hang on before we lose it to the depth of another desert summer.
So we are drinking tons of our favorite Kid-Friendly Green Juice just to put our greens out of their misery.
At least we’ll be healthy as we make the most of our second half of summer. We have to be since we’ll be doing a lot of this in the time we have left.
So as we soak up some family time over the next week, I leave you all with a throwback of a perfect treat for you to indulge in during your Fourth of July Celebrations. These Fresh, Simple AND Healthy Red, White, and Blue Popsicles are always a huge hit and so simple to throw together!
I can assure you that we will be downing a few of these while we watch the night skies light up like the Fourth of July!
Healthy Red, White, and Blue Popsicles
Ingredients:
- 1 lb Strawberries, fresh or frozen
- 3/4 tsp Vanilla Creme Stevia (or 1/4 cup Coconut Sugar)
- 2 Tbsp Water
- 1 tsp Lime Juice, freshly squeezed
- 1 16-oz Vanilla Coconut Milk Yogurt, such as So Delicious Cultured Coconut Yogurt (or a Dairy version of choice if not Dairy Free)
- 3 Tbsp Coconut Cream (skimmed from the top of can of full-fat coconut milk)
- 8 oz Blueberries, Fresh or Frozen
- 1 tsp Vanilla Creme Stevia (or 1/3 cup Coconut Sugar)
- 1 tsp Lime Juice, freshly squeezed
- 2 Tbsp Water
Directions:
1. In medium saucepan, mix together: Strawberries, Stevia (or sugar), Water, and Lime Juice. Bring to low simmer for about 5 minutes. Remove from heat and let cool for 5 minutes. Pour in blender and puree to desired consistency.
2. Fill each opening in your popsicle molds one-third of the way with the strawberry mixture. Place in freezer for 30 minutes to set while preparing next step.
3. In small bowl, mix together: Coconut Yogurt and Coconut Cream. After 30 minutes, remove molds from freezer and top strawberry mixture with Coconut Yogurt mixture so mold is now two-thirds full leaving enough room to top with final blueberry mixture. Return strawberry-yogurt layers to freezer for 15 to 30 minutes.
4. While yogurt layer is setting, in medium saucepan, mix together: Blueberries, Stevia (or Coconut Sugar), Water, and Lime Juice. Bring to low simmer for about 5 minutes. Remove from heat and let cool for 15 minutes. Pour in blender and puree to desired consistency.
5. Add as the final layer to the molds and then return to freezer to set for at least one more hour.
