<p>Well, I suppose I would be remiss if I did not post a chocolate recipe in honor of Valentine&#8217;s Day.</p>
<p>So, I am going to share what I will be serving to all of my love bugs on this day of romance. I posted a version of this recipe a long time ago but it is one of those things that my children ask for again, and again, and&#8230;again.</p>
<p>And thank goodness for me&#8230;<em>it involves chocolate.</em></p>
<p>I raised these boys right, I tell ya. <img src='http://cookitallergyfree.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>
<p>This in-demand Allergy-free Valentine&#8217;s Day dessert I am talking about is, of course, <strong>Gluten-free Dairy-free Chocolate Fondue</strong> (also easily made to be <strong>Nut-free</strong> as well)!</p>
<p>But do not thank me for this recipe posting. Thank my boys who reminded me of it as we were driving back from our family ski vacation yesterday.  I was quizzing them about what I should share with you all for an Allergy-free Valentine&#8217;s Day Dessert. This was what they came up with.</p>
<p>It was their choice. So, I declared them brilliant and called it a day. I hope you enjoy it as much as they will.</p>
<p><strong>Oh, and here are some dipper ideas for your fondue:</strong></p>
<p><strong>Fruits:</strong> apples, pears, peaches, pineapples, citrus sections, strawberries, cherries, raspberries, blackberries, sliced bananas (can even grill or caramelize them first), dried apples, dried mangoes, or any other dried fruit.</p>
<p><strong>Cakes and Other Treats (all allergy-friendly versions, of course):</strong> graham crackers, brownie pieces, marshmallows, cookies, shortbread, biscotti, crystallized ginger chunks, bacon (yup, I said it).</p>
<p>There is no wrong answer for what to dip. Use your imagination. Have fun. Go wild.</p>

<p><span class="Apple-style-span" style="font-size: 15px; font-weight: bold;">Allergy-Friendly Chocolate Fondue </span></p>
<p><strong><em>Ingredients:</em></strong></p>
<ul>
<li><strong>6-8 oz of Dark Chocolate</strong> (dairy-free and gluten-free) &#8211; such as <a href="http://www.traderjoes.com/pdf/lists/list-vegan.pdf" target="_blank">Trader Joe&#8217;s Dark Chocolate 72%</a> (see Trader Joe&#8217;s list of Vegan products) - chopped into small pieces</li>
<li><strong>3/4 cup Sweetened or Unsweetened Mimic Creme </strong>(For NUT FREE <em>AND </em>DAIRY FREE: use Full Fat Coconut Milk. If you are not Dairy Free, than you can, of course, use an equal amount of heavy cream)</li>
<li><strong>1/4 tsp Sea Salt</strong></li>
<li><strong>A variety of dipping goodies</strong> ( In the picture above, I used Organic Strawberries, Organic Cherries, Bananas, Pretzel Sticks, <strong><a href="http://cookitallergyfree.com/blog/2011/02/best-ever-brownies-made-gluten-free-and-grain-free/" target="_blank">Homemade Gluten Free Brownies</a></strong>, and <strong>the most</strong> amazing <strong><a href="http://www.sweetrepublic.com/home.html" target="_blank">Homemade Marshmallows</a></strong> from Sweet Republic Artisan Ice Cream shop here in Scottsdale, AZ)</li>
</ul>
<p><strong><em>Directions:</em></strong></p>
<p>1. Warm the Mimic Creme (or Full-Fat Coconut Milk or Heavy Cream) in a heavy bottomed pan until small bubbles begin to form and it comes to a very <em>light</em> boil.  Then add the chocolate pieces and gently whisk until melted, smooth, and fully incorporated.</p>
<p>2. Immediately transfer to a fondue pot and keep it heated it with a low flame, or serve straight from the pot (but it will start to thicken and harden after a while this way).</p>
<p>3.  Assemble all of your dipping goodies of choice and provide some utensils, such as fondue forks or bamboo skewers, to help you dip (or just use your fingers &#8211; especially amongst family)! Enjoy!</p>

<p>No. This little boy I am talking about is Amy&#8217;s, of <a href="http://http://simplysugarandglutenfree.com/" target="_blank">Simply Sugar and Gluten Free</a>. Her little bambino is set to arrive any second. Literally. And today we are throwing her a SURPRISE virtual baby shower since we cannot give her one in person.</p>

<p>And I am making these <strong>Gluten-Free, Dairy-Free, Refined Sugar-Free Apple Streusel Squares with an amazing Maple Cinnamon Glaze</strong> in honor of the event.</p>

<p>These little bite-sized gems are such a treat, with a healthier twist (<em>they lasted all about two seconds in my house</em>). And can so easily be made safe for multiple types of modified diets. Definitely a perfect addition to a baby shower.</p>
<p>Oh. I am not sure if I mentioned this yet. But, this may be a good time to tell you that these treats are totally and completely addicting. Consider yourself warned. If you have no will power, you may not want to make these.</p>

<p><strong>Gluten-Free Apple Streusel Squares with Maple Cinnamon Glaze</strong></p>
<p><em>Gluten-Free, Dairy-Free, Refined Sugar-Free; Easily Nut-Free and Egg-Free</em></p>
<p><strong>Ingredients:</strong></p>
<p><span style="color: #0000ff;"><strong><em>Apples:</em></strong></span></p>
<ul>
<li>2 Small Apples (such as Fuji, Braeburn, or Honeycrisp), peeled, cored, and diced into 1/2 inch pieces</li>
<li>2 Tbsp Coconut Palm Sugar</li>
<li>1 Tbsp Ground Cinnamon</li>
</ul>
<p><span style="color: #0000ff;"><em><strong>Cake:</strong></em></span></p>
<ul>
<li>2/3 cup Superfine Brown Rice Flour (such as <a title="Authentic Foods" target="_blank">Authentic Foods</a> brand)</li>
<li>1/3 cup Millet Flour OR Almond Flour</li>
<li>1/4 Tbsp Arrowroot Starch</li>
<li>1 1/2 tsp Baking Powder, Aluminum Free</li>
<li>1/2 tsp Baking Soda</li>
<li>1/2 tsp Xanthan Gum</li>
<li>1/4 tsp Fine Sea Salt</li>
<li>1/2 cup Grapeseed Oil, OR Coconut Oil measured in liquid state</li>
<li>1/2 cup Coconut Palm Sugar (or Granulated Sugar)</li>
<li>1 Egg (<strong>FOR EGG FREE: </strong>Mix together in small bowl: 1 1/2 Tbsp Unsweetened Applesauce with 3/4 tsp additional Baking Powder with 1 Tbsp Warm Water and with 3/4 tsp Ener G Egg Replacer – use mixture where you would add eggs)</li>
<li>1 Tbsp Vanilla</li>
<li>1/3 cup Apple Cider</li>
</ul>
<p><span style="color: #0000ff;"><strong><em>Streusel:</em></strong></span></p>
<ul>
<li>2 Tbsp Almond Flour OR Millet Flour</li>
<li>3 Tbsp Coconut Palm Sugar</li>
<li>3 Tablespoons Coconut Oil, measured in liquid state</li>
<li>2 Tablespoons Ground Chia Seeds</li>
<li>2 teaspoons Cinnamon</li>
</ul>
<p><span style="color: #0000ff;"><strong><em>Optional Maple Cinnamon Glaze:</em></strong></span></p>
<ul>
<li>1/2 Cup Coconut Sugar, whizzed in food processor to match consistency of confectioner&#8217;s sugar</li>
<li>1 Tbsp Coconut Oil</li>
<li>1 Tbsp Maple Syrup</li>
<li>2 tsp Cinnamon</li>
<li>2 Tbsp Coconut Milk</li>
</ul>
<p><strong>Directions:</strong></p>
<p>1. Preheat oven to 350 degrees. Grease an 8 x 8 inch square pan. Toss together Apples, Coconut Sugar, and Cinnamon. Set aside.</p>
<p>2.  In a medium bowl, whisk together until airy: Superfine Brown Rice Flour, Millet or Almond Flour, Arrowroot Starch, Baking Powder, Baking Soda, Xanthan Gum, and Sea Salt.</p>
<p>3.  In bowl of stand mixer, add: Oil and Coconut Sugar. Beat on medium-high for 1 minute. Add egg (or Egg-replacer) and vanilla. Stop to scrape down sides.</p>
<p>4.  Add half of the flour mixture, then all of the apple cider, then the rest of the flour mixture and mix until just blended.</p>
<p>5.  Mix together all streusel ingredients until mixture is crumbly. This may make more than you need or want to use. Reserve any extra for another use.</p>
<p>6.  Spread half of batter in prepared pan with a spatula. Place prepared  apples evenly on batter. Then top apples with remaining half of batter. Sprinkle Streusel topping over top of batter. Bake for 40 minutes, or until toothpick comes out clean.  Let cool. Once totally cooled, you can drizzle with glaze (directions below), or if not using glaze, simply cut into into bars.</p>
<p><em>For Glaze: Whisk together all Glaze ingredients until smooth and thoroughly combined. Drizzle over cooled bars.</em></p>

<p>My family has arrived for the Holidays in full force. We have a house full of mouths to feed and I am loving every minute of it.</p>
<p>We are spending a lot of time baking right now and there have been many batches of these Maple Spice Cookies made so far.  These are one of my family&#8217;s favorite cookies. They definitely disappear quickly around here.</p>
<p>Even though I shared a version of these with you last year at this time, I thought I would re-visit them and share the version I am making this year with you. If you want your home filled with amazing holiday smells, then I suggest you get a batch of these going in your oven about now. They will make you happy.</p>
<p><span style="font-weight: normal;">These cookies are perfectly chewy and cake-like (as long as you do not overcook them). They puff up so beautifully while they are baking and are an amazing combination of holiday flavors. They keep very well and make a wonderful homemade gift.</span></p>

<h2><strong>Gluten- Free Maple-Spice Cookies</strong></h2>
<p><strong>(Easily Adaptable to be Dairy-Free, Egg-Free, and Nut-Free)</strong></p>
<p><em>Makes about 24 cookies</em></p>
<p><strong><span style="color: #ff0000;">Ingredients:</span></strong></p>
<ul>
<li>1 cup White Rice Flour</li>
<li>2/3 cup Almond Flour <em>(</em><em>For Nut Free</em><em>: use certified Gluten-Free Oat Flour)</em></li>
<li>2/3 cup Potato Starch</li>
<li>¾ teaspoon Xanthan Gum</li>
<li>2 teaspoons Baking Soda</li>
<li>½ teaspoon Sea Salt, fine</li>
<li>2 teaspoons Ground Cinnamon</li>
<li>½ teaspoon Ground Cloves</li>
<li>¼ teaspoon Ground Ginger (optional)</li>
<li>12 Tablespoons Butter, unsalted – softened at room temperature <em>(</em><em>For Dairy Free</em><em>: use 6 Tbsp Spectrum Organic Shortening with 6 Tbsp Earth Balance Vegan Buttery Stick, room temperature)</em></li>
<li>¾ cup **Organic Maple Sugar, OR Brown Sugar, packed, OR Organic Palm or coconut sugar</li>
<li>1 Large Egg <em>(</em><em>For Egg Free: </em><em>use 2 tablespoons water + 1 tablespoon oil + 1/2 teaspoon baking powder, beaten together until smooth)</em></li>
<li>1 ½ teaspoons Vanilla Extract</li>
<li>¼ cup Grade B Maple Syrup (preferably organic)</li>
<li>1 Tablespoon Unsulphured Molasses</li>
</ul>
<p><em>For Rolling Cookies In (Mix Following Together in small bowl):</em></p>
<ul>
<li>2 Tablespoons Maple, Brown, or Palm Sugar</li>
<li>2 teaspoons Ground Cinnamon</li>
</ul>
<p><strong><span style="color: #ff0000;">Directions:</span></strong></p>
<p>1.  Preheat oven to 375 degrees.</p>
<p>2.  In medium bowl, whisk together white rice flour, almond (or oat) flour, potato starch, xanthan gum, baking soda, sea salt, ground cinnamon, ground cloves, and ground ginger (if using) until well-blended and mixture feels light.</p>
<p>3.  In large bowl of electric mixer, cream together <em>room temperature</em> butter (or Dairy-Free replacement) and sugar until light and fluffy (about 3 minutes with mixer at medium speed), scraping sides of bowl with rubber spatula once or twice.</p>
<p>4.  Add egg (or Egg –Free replacement), vanilla extract, and Maple Syrup, and Molasses.  Mix until combined, about 30 seconds. Scrape down sides of bowl.</p>
<p>5.  Add dry ingredients slowly while mixer is on LOW speed. Mix until just combined, about 30 seconds, stopping to scrape bowl once.</p>
<p>6.  Roll dough into 1 ¾ inch balls (about the size of a ping-pong ball) then roll each ball in the sugar cinnamon mixture before placing on baking sheet.</p>
<p>7.  Place cookie balls (rolled in sugar mixture) 2 inches apart on <em>ungreased cookie sheet</em>. DO NOT USE A SILPAT MAT OR PARCHMENT for these. These cookies will puff up much higher directly on sheet. <em>Important: </em>Place cookie sheet in refrigerator for 20 minutes prior to baking to chill dough.  Repeat with remaining dough (do not put raw dough on hot cookie sheets-cool cookie sheets first or cookies will spread).</p>
<p>8.  Bake for 11-13 minutes.  These cookies are incredibly soft and chewy. Do not overcook them (they will not look totally done when you pull them out, but will firm up as cooling).  Once done, cool on cookie sheet for 2-3 minutes then transfer to wire rack.</p>

<p><strong><em>**Maple Sugar, although absolutely delicious, can be quite expensive.  You can also use Brown Sugar (or Organic Palm Sugar) in this recipe with perfect results as well.</em></strong></p>

<p>This decadent gluten-free, grain-free, dairy-free, egg-free, and easily nut-free <strong>Salted Caramel Apple Pie</strong> was made once again in our house this weekend because I just <em>had to</em> test them out just one more time for our final week of <a href="http://simplysugarandglutenfree.com/a-gluten-free-holiday-2011/" target="_blank">Simply Sugar and Gluten Free&#8217;s Gluten-Free Holiday</a> event.</p>

<p>Okay, so about this <strong>Gluten-free, Grain-free, Dairy-free Salted Caramel Apple Pie.</strong>..</p>
<p>It is naughty. But only a little bit naughty. It is decadent. It is sweet. But not in a too-syrupy kind of way.  It is super easy to make. It is one of my favorite indulgences this time of year.</p>
<p>But wait. It is also a bit healthy. Well, at least healthier than a gluten-filled, grain-filled, dairy-filled version. And, if you count those <strong><a href="http://cookitallergyfree.com/blog/2011/10/9-health-benefits-of-apples-grain-free-apple-puff-pancakes/" target="_blank">9 health benefits of apples</a></strong> (and just ignore the fact that they are smothered in salted caramel yumminess) then, I would go ahead and say&#8230;<em>dig in, my friends!</em></p>
<p>But, hey. The holidays are for allowing yourself a special treat here and there. So do not hate me. In fact, I dare you to make them. I think you will really love me once you do.</p>
<p>And then you will apologize for any mean thoughts you had about me for forcing this on you.</p>
<p>A few notes about this <strong>Gluten-free, Grain-free, Dairy-free pie</strong>:</p>
<p>1. You can also just make these as bars, instead of a pie, in an 8 x 8 baking dish. I actually made this in a tart pan this time. They are very versatile.</p>
<p>2. I use an almond flour press-in crust for the recipe, but you can EASILY make this nut-free by using the press-in cookie crust that I note at the bottom of the recipe.</p>
<p>3. If you are short on time and are not dairy free, Trader Joe&#8217;s has a wonderful Salted Caramel Sauce that you can use in place of this homemade sauce.</p>
<p>4, This recipe is a very simple one to put together. But it has an incredible WoW factor that makes it look really difficult! A good way to impress your guests.</p>

<p><strong>Salted Caramel Apple Pie (or Bars)</strong></p>
<p><em>Gluten-Free, Dairy-Free, Grain-free, Egg-Free, Soy-Free, EASILY Nut-Free</em></p>
<p><em><strong>Ingredients:</strong></em></p>
<p><strong>Pie Crust</strong> (For <strong>NUT-FREE</strong> pie crust see <strong>**NOTE**</strong> at bottom of recipe):</p>
<ul>
<li>2 Cups Almond Meal</li>
<li>7 Tbsp Coconut Oil, melted, OR Butter, Melted, OR Earth Balance Vegan Butter, Melted</li>
<li>1 Tbsp Maple Syrup, preferably Grade B</li>
<li>1/2 Cup Brown Sugar</li>
<li>21/2 tsp Vanilla Extract</li>
<li>1/2 tsp Cinnamon</li>
</ul>
<p><strong>Salted Caramel Sauce:</strong></p>
<ul>
<li>1/2 Cup Full-Fat Canned Coconut Milk</li>
<li>2 Tbsp Coconut Oil</li>
<li>3/4 cup Light Brown Sugar, packed</li>
<li>2 Tbsp Maple Syrup, Grade B if possible</li>
<li>1/4 tsp Sea Salt</li>
<li>1 tsp Vanilla Extract</li>
</ul>
<p><strong>Filling:</strong></p>
<ul>
<li>4 Apples, such as Fuji (or for tarter pie, Granny Smith), peeled, cored, and <em>thinly</em> sliced</li>
<li>2 lemons, juiced</li>
<li>1/4 cup Light Brown Sugar or Coconut Sugar</li>
<li>1 Tbsp Cinnamon</li>
<li>1/8 tsp Sea Salt</li>
<li>1 tsp Vanilla Extract</li>
</ul>
<p><em><strong>Directions:</strong></em></p>
<p>1. <strong>For Crust: </strong>Combine all of the ingredients in bowl. With fingertips, press the dough into an 9 inch glass pie plate or tart pan. Dough should be  a bit sticky. Try and bring crust up sides gently. Bake the crust at 350 degrees F for 15 minutes. Allow to cool before adding the filling.</p>
<p>2.<strong> For Caramel Sauce:</strong> While crust is baking, stir together coconut milk, coconut oil, brown sugar, maple syrup, and salt in a medium heavy-bottomed sauce pan. Whisk continuously and bring to a low boil over medium heat. <em>Watch carefully &#8211; do not allow to burn!</em> Reduce heat to medium-low and simmer gently for 3 minutes. Remove from heat and stir in vanilla extract.</p>
<p>3. Let cool for about 10 minutes.</p>
<p>4. <strong>For Filling: </strong>While caramel is cooling, toss apple slices with the juice from the lemons. In medium bowl, mix together Sugar, Cinnamon, and Sea Salt. Drain apples on paper towel, then add to sugar/cinnamon mixture. Add vanilla and toss all together.</p>
<p>5. <strong>Assembly: </strong>Once crust and caramel has cooled, drizzle 3 &#8211; 4 Tbsp of the cooled salted caramel sauce over the base of the crust. Then layer your apple filling evenly over the drizzle of caramel sauce. Lightly drizzle another 3 &#8211; 4 Tbsp of the salted Caramel Sauce over the top of the apples and bake in oven for 30 minutes. After 30 minutes, lightly place a piece of foil over the top of the pie, making sure the edges of the crust are under foil as well, and bake for 15 minutes more.</p>
<p>6.  Drizzle any remaining caramel sauce over top of pie once it comes out of oven. Serve and enjoy!</p>
<p><strong>**NOTE**: To make a Nut-Free Crust, combine 2 cups crushed nut-free, gluten-free cookie crumbs of choice, 2 Tbsp brown sugar, 6 Tbsp Coconut Oil or Melted Butter. Mix and proceed as you would for Crust preparation in step 1 of Directions.</strong></p>

In preparation for Valentine&#8217;s Day, I thought I would share with you these <strong>Easy Gluten-Free Dairy-Free Sweet and Salty Chocolate Bites</strong>. These are a hit with my Sweetheart as well as with my two pint-sized loves.<br />
</br><br />
I am a hopeless romantic. My husband, on the other hand? Well&#8230;he tries.</p>
<p>In about one month, I will have been married to the love of my life for eleven years.</p>
<p>For the first decade of our marriage we had a song.  Well&#8230;</span><em><span style="font-weight: normal;">I </span></em><span style="font-weight: normal;">called it &#8220;Our Song&#8221;. My husband just nodded in absent-minded agreement whenever we heard it.</p>
<p>As we are getting ready to begin the next decade of our lives together, I thought it was time for a new song. I also thought I should let my husband know that, in fact, our song was changing.  I figured I should keep him up to speed on matters such as these.</p>
<p>For the record, I </span><em><span style="font-weight: normal;">did</span></em><span style="font-weight: normal;"> choose a song he loves by one of his favorite artists, Daniel Ho. My husband, an amazing surfer, by hobby (as some of you may remember from <a href="http://cookitallergyfree.com/blog/2010/08/on-a-personal-note/" target="_blank">this post</a>), loves the beachy feel of Daniel&#8217;s music. </p>
<p>So I wanted to let him know he could now refer to one of Daniel&#8217;s songs as &#8220;Our Song&#8221;.  I was totally sure he would be ecstatic (I, of course, am being completely sarcastic).</p>
<p><em><span style="font-weight: normal;">Me:</span></em><span style="font-weight: normal;"> <strong>Honey, we have a new song.</strong></span></p>
<p><em><span style="font-weight: normal;">Him</span></em><span style="font-weight: normal;">: <strong>Okay.</strong></span></p>
<p><em><span style="font-weight: normal;">Me:</span></em><span style="font-weight: normal;"> <strong>Do you want to hear it?</strong></span></p>
<p><em><span style="font-weight: normal;">Him </span></em><em><span style="font-weight: normal;">(as he continues to read his magazine, listening half-heartedly): </span></em><span style="font-weight: normal;"><strong>Sure dear.</strong></span></p>
<p><span style="font-weight: normal;">Fast forward to a few weeks later.</span></p>
<p><span style="font-weight: normal;">Said &#8220;New Song&#8221; comes through the speakers from my latest Feel-Good Playlist Mix.</span></p>
<p><em><span style="font-weight: normal;">Me (sarcastically, and with a hint of annoyance):</span></em><span style="font-weight: normal;"> <strong>Do you know what song this is?</strong> <em>(completely </em></span><em><span style="font-weight: normal;">certain that he did not have any idea what I was referring to)</span></em></p>
<p><em><span style="font-weight: normal;">Him (with a twinkle in his eye and his well-known smirk tugging on the corners of his lips):</span></em><span style="font-weight: normal;"> <strong>Absolutely Honey. This is &#8220;Our Song</strong>&#8220;</span><em><span style="font-weight: normal;"> (as he grabs me, lifting me off of my feet, and planting a big kiss on my lips).</span></em></p>
<p><span style="font-weight: normal;">Okay. Maybe the movie-style kiss was the wishful-thinking part of my romantic self. But&#8230;he remembered. That, here, my friends, is the important part and all that really matters. </span></p>
<p><span style="font-weight: normal;">Now we have a new song.</span></p>
<p><span style="font-weight: normal;">I love this guy.</span></p>
<p><span style="font-weight: normal;">So, for your listening enjoyment, &#8220;Our Song&#8221; is below. You just may want to make it &#8220;Your Song&#8221; too.</span></p>

<h2><span style="font-weight: normal;">Easy Sweet and Salty Chocolate Bites:</span></h2>
<h2><span style="font-weight: normal;">Gluten-Free, Dairy-Free, Egg-Free</span></h2>
<p><span style="font-weight: normal;"><strong><span style="color: #ff0000;"><em><span style="color: #33cccc;">Ingredients:</span></em></span></strong></span></p>
<ul>
<li><span style="font-weight: normal;">6 oz Semi-Sweet or Bittersweet Chocolate, chopped (I used <a href="http://www.sunspire.com/products/organic-fair-trade-65-cacao-semi-sweet-baking-bar" target="_blank">SunSpire Fair Trade Organic 65% Cacao Semi-Sweet Chocolate Bar</a> or you can use a Vegan chocolate such as <a href="http://www.traderjoes.com/pdf/lists/list-vegan.pdf" target="_blank">Trader Joe’s Dark Chocolate 72%</a>). **See Chocolate Note at bottom.</span></li>
<li><span style="font-weight: normal;">3/4 cup Dried Cherries (or dried cranberries)</span></li>
<li><span style="font-weight: normal;">1/2 cup Pistachios, shelled and coarsely chopped or Pecans, coarsely chopped (For Nut-Free: Use Pepitas or Sunflower Seeds)</span></li>
<li><span style="font-weight: normal;">1 1/2 cups Gluten-Free Pretzel Sticks, broken into halves or thirds (I used <a href="http://www.glutino.com/our-products/snacks/pretzels/family-bag-pretzels-sticks/" target="_blank">Glutino Pretzel Sticks</a>)</span></li>
</ul>
<p><strong><span style="color: #ff0000;"><em><span style="color: #33cccc;">Directions:</span></em></span></strong></p>
<p><span style="font-weight: normal;">1.  Line baking sheet (that will fit in refrigerator) with parchment paper. </span></p>
<p><span style="font-weight: normal;">2.  In small bowl, mix together dried cherries, pistachios (or Nut-Free alternative) and pretzel pieces. Stir to combine.</span></p>
<p><span style="font-weight: normal;">3. Place chocolate in medium heat-proof glass bowl and place bowl over pot of simmering water.  Make sure bowl fits snugly on pot and that bottom of bowl does not touch water inside &#8211; just rests on lip of pot.  Stir chocolate constantly with rubber spatula until melted, shiny and smooth. Do NOT allow any water to get into chocolate &#8211; chocolate will seize immediately!<strong> </strong></span></p>
<p><span style="font-weight: normal;"><em>Alternatively: you can melt chocolate in heat-proof microwave-safe bowl in microwave. Heat for 30 seconds, then stir. Heat another 30-seconds, then stir. Continue in 30 second intervals until chocolate is melted, shiny and smooth.</em></span></p>
<p><span style="font-weight: normal;">4. Add pretzel and cherry mixture to melted chocolate and stir until all is coated evenly.  Then place 1 heaping Tablespoonful of chocolate mixture onto prepared baking sheet lined with parchment.  Shape each spoonful into a mound on sheet. Repeat with all remaining mixture. </span></p>
<p><span style="font-weight: normal;">5.  Chill for 15 &#8211; 30 minutes before serving.</span></p>

<span style="font-weight: normal;">I did not have the energy to throw an all-out event like we usually do (every. single. year.).  Instead, I waited until the day of the game and told my husband to tell whoever wanted to come over to come. But&#8230;he had strict instructions to inform them that this was, in fact, most definitely, NOT a Superbowl Party.  In other words? He was informing them to not expect much.  I think the word he used was </span><em><span style="font-weight: normal;">LowKey</span></em><span style="font-weight: normal;">. </span></p>
<p><span style="font-weight: normal;">Please tell me that some of you had a party like this too.</span></p>
<p><span style="font-weight: normal;">In my mind, when you do not call it a party, you do not have the responsibility of having to be &#8220;on&#8221;.  I took this to heart &#8211; I left my guests to fend for themselves and I was able to watch the entire game, including all of the commercials, and that awesome half-time show. A rare and unusual treat.</span></p>
<p><span style="font-weight: normal;">But, even though I did not whip up my usual SuperBowl spread, I had an intense craving for chocolate. In my female mind, no football game is complete without chocolate.</span></p>
<p><span style="font-weight: normal;">These brownies have been taunting me ever since I saw them grace the cover of my </span><a href="http://www.bonappetit.com/magazine/toc/february_2011_toc" target="_blank"><span style="font-weight: normal;">February issue of Bon Appetit Magazine</span></a><span style="font-weight: normal;"> with the teaser title &#8220;BEST-EVER BROWNIES&#8221;.  I am a sucker for a challenge like that. I had to see for myself if these were, indeed, the Best-Ever. But with browned butter (or Browned Earth Balance Natural Buttery Spread for my Dairy-Free version) in this recipe, I had a sneaking suspicion that they would be right.</span></p>
<p><span style="font-weight: normal;">The original recipe is written by </span><a href="http://www.alicemedrich.blogspot.com/" target="_blank"><span style="font-weight: normal;">Alice Medrich</span></a><span style="font-weight: normal;"> &#8211; chocolate expert, cookbook author, and cooking teacher. Her most recent book is </span><a href="http://www.amazon.com/Crispy-Crunchy-Your-Mouth-Cookies-Medrich/dp/1579653979" target="_blank"><span style="font-weight: normal;">Chewy Gooey Crispy Melt-In-Your-Mouth Cookies</span></a><span style="font-weight: normal;">.  And according to the recipe testers at Bon Appetit: </span><em><span style="font-weight: normal;">&#8220;These are some of the best brownies we&#8217;ve ever had-fudgy in the middle and chewy on the outside with a shiny, crackly top. The browned butter adds a rich nutty flavor.&#8221;</span></em></p>
<p><span style="font-weight: normal;">All I know is that with a few simple substitutions, these brownies can be easily adapted to be gluten-free and grain-free. And with a few more substitutions, they can be transformed even farther into a dairy-free, egg-free, nut-free indulgence as well. Even with the substitutions, these brownies are spot-on with Bon Appetit&#8217;s review of them. Fudgy. Chewy. Crackly. Nutty. Unbelievable (okay, this last word is mine).</span></p>
<p><span style="font-weight: normal;">Perfect for your next &#8220;Not Really a Party&#8221; party.  Or, just the right Valentine treat for the love(s) in your life. I know that my husband and boys will be getting another batch of these on this upcoming day of Love.</span></h3>

<h2>Cocoa Brownies with Browned Butter:               Gluten-Free and Grain-Free</h2>
<p><strong>Easily Adapted to be Dairy-Free, Egg-Free, and Nut-Free</strong></p>
<p><strong>Adapted from </strong><a href="http://www.alicemedrich.blogspot.com/" target="_blank"><strong>Alice Medrich</strong></a><strong>, as written in the </strong><a href="http://www.bonappetit.com/magazine/toc/february_2011_toc" target="_blank"><strong>February Issue of Bon Appetit Magazine</strong></a></p>
<p><em><span style="color: #ff0000;"><strong>Ingredients:</strong></span></em></p>
<p><strong>Non-stick Vegetable Oil Spray</strong></p>
<p><strong>10 Tablespoons (1 1/4 sticks) unsalted butter, cut into 1-inch pieces (For Dairy-Free: use equal amount Earth Balance Natural Buttery Spread-this browns in it&#8217;s own way, still producing a slightly nutty flavor)</strong></p>
<p><strong>1 1/4 cups Coconut Palm Sugar (original recipe calls for sugar) &#8211; the Coconut Palm Sugar added a superior nutty flavor</strong></p>
<p><strong>3/4 cup Natural Unsweetened Cocoa Powder (I used </strong><a href="http://www.rapunzel.com/products/rapunzel/rapunzel_baking_kokoa.html" target="_blank"><strong>Rapunzel Organic Cocoa Powder</strong></a><strong>)-spooned into cup to measure, then leveled</strong></p>
<p><strong>1 teaspoon Vanilla Extract</strong></p>
<p><strong>2 Large Eggs, chilled (For Egg-Free: use 2 Tablespoons Ground Chia Seeds mixed with 6 Tablespoons HOT water-let sit for 5 minutes to gel)</strong></p>
<p><strong>1/3 cup plus 1 Tablespoon Almond Flour, such as </strong><a href="http://www.amazon.com/Blanched-Almond-Meal-Flour-lb/dp/B0006ZN538?&amp;camp=212361&amp;linkCode=wey&amp;tag=cookitallefre-20&amp;creative=391817" target="_blank"><strong>Honeyville </strong></a><strong> (For Nut-Free: Use equal amount of your favorite Gluten-Free Flour Blend)</strong></p>
<p><strong>1 cup Walnut Pieces (I did not use any Walnuts in the recipe)</strong></p>
<p><em><span style="color: #ff0000;"><strong>Directions:</strong></span></em></p>
<p><strong>1.  Position rack in the bottom third of oven. Preheat to 325 degrees. Line 8x8x2 inch metal pan with foil, pressing foil firmly against sides and leaving 2 inch overhang.  Coat foil with non-stick cooking spray.</strong></p>
<p><strong>2.  Melt Butter (or, for Dairy-Free, Earth Balance Buttery Spread) over medium heat. Continue cooking until butter stops foaming and browned bits form on bottom of pan. STIR OFTEN. About 5 minutes.</strong></p>
<p><strong>3.  Remove from heat. Immediate stir in: sugar, cocoa, 2 teaspoons of water, vanilla, and 1/4 heaping teaspoon of fine sea salt. Stir well to blend. Let sit 5 minutes. Mixture will be very hot.</strong></p>
<p><strong>4.  After 5 minutes, add eggs (or chia mixture) to hot mixture, 1 at a time (or half of chia mixture at a time). Beat vigorously to blend after each addition.</strong></p>
<p><strong>5.  When mixture looks thick and shiny, add your flour choice and stir until blended. 60 vigorous strokes. Stir in nuts, if using. Transfer batter to prepared pan.</strong></p>
<p><strong>6.  Bake until toothpick inserted into center comes out </strong><em><strong>almost</strong></em><strong> clean (with few moist crumbs attached), about 25-30 minutes.  Cool in pan on rack. Then lift out using foil overhang. Cut into 16 squares.  Store airtight at room temperature.</strong></p>

<p>These rock. Seriously. These chewy Gluten-Free, Dairy-Free Granola Oatmeal Cookie Bars really take the cake.  They taste like an oatmeal cookie. They look like a granola bar.  Yet they have the nutrition of a power-packed snack.</p>
<p>My kids call these dessert.  I call these another of my sneaky tricks.  My husband? Well&#8230;he just calls me <em>annoying</em>.  He has long since stopped being amused at how excited I get when I know my family is eating well, even when they do not.</p>
<p><span style="font-weight: normal;">My favorite part about these is how easy they are to whip up. Just throw the dry ingredients into a bowl, add wet ingredients to a well in the middle, mix (aka, squish) everything together with hands, press into pan, bake, and viola. That is it.  Thirty minutes later you have a delicious and nutritious treat.</span></p>
<p><span style="font-weight: normal;">You can feel good about serving these as a snack.</span></p>
<p><span style="font-weight: normal;">Or for dessert.</span></p>
<p><span style="font-weight: normal;">Or even for breakfast.</span></p>
<p><span style="font-weight: normal;">In fact, this morning, I gave each boy a nice sized bar (excuse me, <em>cookie</em>), a hard-boiled egg, and some fresh fruit (kiwi and Gaiya melon, to be exact). And as they bounded out the door and off to school, I actually felt pretty good about what their brains would be fueled with for the next few hours.</span></p>
<p><span style="font-weight: normal;">And then I went and took a little nap.</span></p>
<p><span style="font-weight: normal;">I wish. Who am I kidding? But I bet I had you going&#8230;or at least a little jealous of this said nap.</span></p>

<h2>Granola Oatmeal Cookie Bars</h2>
<p><strong>Gluten-Free and Dairy-Free</strong></p>
<p><strong></strong><em>Easily Made Egg-Free and Nut-Free Too</em></p>
<p><em><span style="color: #99cc00;"><strong>Ingredients:</strong></span></em></p>
<ul>
<li>2 cups Certified Gluten Free Oats</li>
<li>1 cup Almond Flour (OR for Nut-Free: use equal amount Certified Gluten Free Oat Flour OR Buckwheat flour)</li>
<li>1/3 cup Organic Coconut Palm Sugar (or Brown Sugar)</li>
<li>1/4 cup Quinoa Flakes</li>
<li>1/4 cup Ground Chia Seeds (OR Ground Flax Seeds OR Ground Hemp Seeds)</li>
<li>2 tsp Ground Cinnamon</li>
<li>3/4 tsp Celtic Sea Salt, fine</li>
<li>1 cup Dried Fruit of choice &#8211; pick one or use a combination to equal 1 cup (Raisins, Golden Raisins, Dried Cranberries, Dried Apples, Dried Apricots, Dried Cherries, etc)</li>
<li>1/2 cup Seeds or Nuts of choice &#8211; pick one or use a combination to equal 1/2 cup (Pepitas, Sunflower Seeds, Chopped Pistachios, Chopped Cashews, Chopped Macadamia Nuts, Chopped Pecans, etc)</li>
<li>1/4 cup Dark Chocolate Chunks &#8211; Optional (make sure to read labels on your chocolate for your allergies)</li>
<li>1 egg, beaten (OR for Egg-Free: combine 1 Tbsp Ground Chia or Flax seeds with 3 Tbsp HOT water, let sit 5 minutes until gelled)</li>
<li>2/3 cup Cold-Pressed Unrefined Coconut Oil or Canola Oil, preferably Organic</li>
<li>1/2 cup Grade B Maple Syrup, preferably Organic</li>
<li>1 Tbsp Vanilla</li>
</ul>
<p><em><span style="color: #99cc00;"><strong>Directions:</strong></span></em></p>
<p>1.  Preheat oven to 350 degrees.  Grease a 9 x 13 inch glass baking pan.</p>
<p>2.  Sift together in large bowl: Gluten Free Oats, Almond Flour (or Oat or Buckwheat Flour), Coconut Palm Sugar, Quinoa Flakes, Ground Chia (or flax or hemp) Seeds, Cinnamon, Sea Salt, and Dried Fruit and/or Nuts or Seeds.</p>
<p>3.  Make small well in center of dry mixture.  Add: beaten egg (or flax mixture), oil, syrup, and vanilla.</p>
<p>4.  Squish/mix together with hands.  Press into prepared baking dish.  I like to not press all the way to edges (will not spread while baking), and instead leave a 1 inch border from edge of pan.  This makes for a thicker and chewier bar.</p>
<p>5.  Bake for about 30 minutes, or until edges look slightly golden. Center will look like it is not totally cooked.</p>
<p>6.  Let sit for at least 1 hour before slicing. As it cools, it holds together better.</p>

<h3><span style="font-weight: normal;">I know Nut Butter Cookies are not anything new to the blogging world. But, these are not your typical Nut Butter Cookies.  Made with Sunflower Seed Butter, buckwheat flour, flax meal, ground chia seeds, and allergen-friendly chocolate chips (if you so choose), these cookies are gluten-free, grain-free, egg-free, corn-free, and dairy-free (if you ignore the Hershey&#8217;s Kisses that my son insisted on for the picture below and  you use Vegan chocolate instead).  And, these are actually&#8230;(gasp) healthy!! And get ready for this&#8230;delicious!!</span></h3>
<p><span style="font-weight: normal;">I have a secret addiction to these. I store them in the freezer because, as some of you may remember from a previous </span><a href="http://cookitallergyfree.com/blog/2010/08/gluten-free-chocolate-chip-cookies-a-gluten-free-blogger-adopted/" target="_blank"><span style="font-weight: normal;">chocolate chip cookie post</span></a><span style="font-weight: normal;">, I love hard frozen chunks of chocolate when I eat my cookies.  I also store them in the freezer to hide them from the hubby and the boys.  Otherwise I find this&#8230;.</span></p>

<p><span style="font-weight: normal;">For the males in this house, as long as it is out of sight, it is out of mind. Forgotten. Unfortunately, that does not hold true for me. Once I place those goodies in that freezer, it is as if they suddenly gain a voice of their own and are calling out to me. Shouting, really. I cannot forget. I wish I had that part of the male mind. I am not kidding.</span></p>
<p><span style="font-weight: normal;">So today, as my last post of 2010, I will share with you my recipe for a batch of cookies that will leave you not feeling so guilty about your secret sweet indulgence.</span></p>
<p><span style="font-weight: normal;">And while I have enjoyed every second of this last week spending time with my family and staying relatively tech-free, I will be back and blogging with gusto in 2011 (hard to believe that the new year is only a day away).</span></p>
<p><span style="font-weight: normal;">Until then, I wish all of you a safe, fun, and trouble-free New Year! I hope you spend it in what you deem to be the perfect way!</span></p>

<h2>&#8220;Nut&#8221; Butter Chocolate Chip Cookies</h2>
<h3><strong><em>Gluten-Free, Dairy-Free, Egg-Free, Nut-Free, Corn-Free, Grain-Free</em></strong></h3>
<p><span style="color: #33cccc;"><strong>Ingredients:</strong></span></p>
<ul>
<li>1 Tbsp Flax Meal OR Ground Chia Seeds</li>
<li>3 Tbsp HOT (almost boiling) water</li>
<li>1/3 cup Coconut Oil OR Canola Oil, preferably Organic and Unrefined</li>
<li>1 cup Brown Sugar OR Organic Coconut Palm Sugar</li>
<li>1/2 cup Sunflower Seed Butter, ROOM TEMPERATURE</li>
<li>1/2 tsp Vanilla Extract</li>
<li>1/2 cup Flax Meal</li>
<li>1/2 cup Ground Chia Seeds OR more Flax Meal</li>
<li>1/4 cup Buckwheat Flour (Buckwheat is actually a fruit seed, not a grain)</li>
<li>1 tsp Baking Soda</li>
<li>1/4 tsp Sea Salt, fine</li>
<li>1/4 tsp Ground Cinnamon</li>
<li>1/2 cup Allergen Friendly Semi-Sweet Chocolate Chips, such as Enjoy Life or Tropical Source</li>
</ul>
<p><span style="color: #33cccc;"><strong>Directions:</strong></span></p>
<p>1. In a small bowl, whisk together the 1 Tbsp Flax Meal or Ground Chia with the HOT (almost boiling) water and let it sit for about 5 minutes until it has &#8220;gelled&#8221;.</p>
<p>2.  In a medium bowl, add the &#8220;gelled&#8221; flax (or chia) mixture,  the coconut (or canola) oil, and the sugar.  Mix/beat until well combined.  Then add in the room temperature Sunflower Seed Butter and continue mixing until well combined.</p>
<p>3. In another medium bowl, whisk together: the 1/2 cup flax meal, 1/2 cup ground chia seeds (or more flax meal), the buckwheat flour, the baking soda, salt, and cinnamon.  Whisk until light and well combined.</p>
<p>4.  Add the mixed dry ingredients to the wet ingredients and combine.  You will most likely need to get in there with your hands and really mix it since this is a little thicker than a normal cookie batter.  Add in your chocolate chips at this point.</p>
<p>5.  Once well combined (hand method is really best for mixing these), roll cookies into 1 inch balls and place on your cookie sheet evenly spaced, flattening slightly with hands.  Preheat oven to 350 degrees.  Place the cookie sheet (and any remaining dough that you have not yet rolled) into the refrigerator for about 20 minutes.  This keeps the cookies nice and formed and prevents spreading. Do this for each sheet of cookies that you make.</p>
<p>6.  Bake in a 350 degree oven for 11-12 minutes.  After a couple of minutes, remove cookies to a rack to finish cooling.  Enjoy!</p>
<p style="text-align: left;">**Note: You can also turn these into blossom cookies by not putting the chocolate chips into the batter and instead pressing your chocolate in the center of your cookie while they are still hot.</p>

<p><span style="font-weight: normal;">Okay, quick! Think back to one of your favorite childhood holiday memories. Now make note of that memory. You will be quizzed on it later.</span></p>
<p><span style="font-weight: normal;">Although I have so many favorites, the first memories that come to my mind must have stood out the most.  I remember&#8230;</span></p>
<p><span style="font-weight: normal;">Holiday caroling with my Mother&#8217;s Master Singers group through our San Francisco neighborhoods.</span></p>
<p><span style="font-weight: normal;">Parties at our house with copious amounts of food.  Laughter. More singing.  And did I mention the food?</span></p>
<p><span style="font-weight: normal;">Christmas programs with the Sunday School at church.  My Mom directed most of them.</span></p>
<p><span style="font-weight: normal;">And cookies. More cookies than you can imagine.</span></p>
<p><span style="font-weight: normal;">I have vivid images of freshly baked cookies cooling on racks on the counter and cluttering every kitchen surface with their delectable temptings as my Mom prepared to package them up for family and friends.</span></p>
<p><span style="font-weight: normal;">And now&#8230;</span><em><span style="font-weight: normal;">shockingly <img src='http://cookitallergyfree.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </span></em><span style="font-weight: normal;">, I have become more like my mother than I ever thought. My own counters are spilling over with cookies as we get ready to share with </span><em><span style="font-weight: normal;">our</span></em><span style="font-weight: normal;"> neighbors and friends this holiday season.</span></p>
<p><span style="font-weight: normal;">What I find to be even more humorous is that my own boys have figured out the art of cookie thievery that my sister and I mastered 30 plus years ago. I can turn my back for no less than a moment and discover this&#8230;.</span></p>

<p><span style="font-weight: normal;">So today, for Day 10 of our 12 Days of Gluten-Free Christmas Cookies Event, I want to share my gluten-free adaption of one of my Mom&#8217;s holiday staples.</span></p>
<p><span style="font-weight: normal;">Cinnamon &amp; Brown Sugar Icebox Shortbreads.</span></p>
<p><span style="font-weight: normal;">These were a mainstay in our cookie jar growing up and I think they are also the reason that my husband married me.  He was keen on the fact that this union would also mean an unlimited supply of these cookies. Prior to going gluten-free, he was absolutely addicted to them. He could clear off a plate of these in a blink. And finally, this year, I decided that I would surprise him and try to re-create them to be gluten-free.  I am not sure that he has quite given me the approval that they are as good as my mother&#8217;s gluten filled version, but we have all agreed unanimously that they are pretty darn stinkin&#8217; good.</span></p>
<p><span style="font-weight: normal;">I actually have two methods of baking these, both using the same recipe, and both giving two totally different results.</span></p>
<p><span style="font-weight: normal;">One involves rolling them into logs, chilling for a few hours, then slicing into the rounds. This method produces the cookies that my husband so adores.</span></p>

<p><span style="font-weight: normal;">The other involves pressing the dough into a cake pan and baking, then turning onto a cutting board and slicing into 12 triangles.  This method produces a very crunchy cookie that is PERFECT for dipping in coffee or hot cocoa.</span></p>

<h2>Cinnamon &amp; Brown Sugar Icebox Shortbreads</h2>
<p><strong>Gluten-Free, Egg-Free, and adaptable to be Dairy-Free and Nut-free</strong></p>
<p><strong> </strong></p>
<p><span style="color: #ff0000;"><strong>Ingredients:</strong></span><strong> </strong></p>
<p><strong>1/2 Cup Superfine Brown Rice Flour (I like Authentic Foods)</strong></p>
<p><strong>1/4 cup Almond Flour, such as Honeyville or Digestive Wellness (For Nut-Free: use Certified Gluten-Free Oat Flour)</strong></p>
<p><strong>1/4 cup Cornstarch</strong></p>
<p><strong>2 Tbsp Arrowroot Starch</strong></p>
<p><strong>1/4 tsp Xanthan Gum</strong></p>
<p><strong>1 tsp Ground Cinnamon</strong></p>
<p><strong>6 Tbsp unsalted butter, softened &#8211; Room Temperature (For Dairy-Free: use 3 Tbsp organic Spectrum Shortening with 3 Tbsp Earth Balanced Vegan Buttery Stick, softened)</strong></p>
<p><strong>1/3 cup Brown Sugar, packed</p>
<p>1/4 tsp Vanilla Extract</p>
<p>2 Tbsp Grade B Maple Syrup, preferably organic</p>
<p><span style="color: #ff0000;">Directions:</span></p>
<p>1.  In medium bowl, whisk together brown rice flour, almond flour, cornstarch, arrowroot starch, xanthan gum, and cinnamon. Continue whisking until mixture is well combined and feels light.</p>
<p>2.  In food processor, cream butter (or Dairy-Free alternative).  Stop, scrape down sides, then add brown sugar.  Cream sugar and butter together until light and fluffy.  Then add vanilla and maple syrup.</p>
<p>3.  Slowly add in flour mixture to the wet ingredients. Scrape down sides once, then run food processor on medium speed until dough just starts to come together into a loose ball form. Remove from food processor.</p>
<p>4.  Option 1 for Baking: Roll dough into 2 &#8211; 3 logs, 2 inches in diameter.  Wrap each log in plastic wrap and refrigerate at least 2 hours/up to overnight. Once chilled, unwrap dough and slice into 1/4 inch thick rounds. Place on cookie sheet, keeping spaced evenly, and bake in oven preheated to 325 degrees for 7-9 minutes. They will not look done but will firm up nicely as they cool. Let sit for 2 &#8211; 3 minutes then transfer to wire rack to cool.  This method should make about 60 cookies.</p>
<p>5.  Chill the rest of the dough while each batch is cooking. You do not want the dough to warm up or they will spread.</p>
<p>6.  Option 2 for Baking: Press dough into a 9 inch round cake pan that has the<em> bottom only </em>lined with parchment paper. Take fork and poke dough at least 20 times evenly all over the surface.  Bake for 22-23 minutes in oven pre-heated to 325.  Let cool for no more than 5 minutes, then carefully and gently turn cookie round onto cutting board (hold hand on cookie as flipping so that it does not thump onto board and break). Slice cookies while still warm into 12 even triangles, like the picture above at the top with the missing wedge.</p>
