I am diabetic too and almond flour is brilliant as it stops the peaks and then troughs. Use it in lemon drizzle cake, just use 80% almond flour and 20% cornflour instead of plain flour works a treat!

Yes, used it for the first time making traditional butter cookies – thumbprint with jam Works perfectly since the nuttiness is great!
