Hi Laurel, thank you so much for your kind words!! I really appreciate it! I love that there is now a gluten free version of Tastespotting and Foodgawkers so that we can look at any pictures and know that they are safe for us without having to figure out the substitutions! The goal of my site and my App is to make sure that I offer options (that have been tested) so that the recipes are safe for most food allergies. I know how difficult the challenges of allergy free baking are and it means a lot for you to say that you appreciate it.

I love that you use coconut oil instead of nasty spreads. GF and dairy free, that’s my kind of baking. If I had some rum I’d be making this right now. I see it in so many recipes lately and I don’t think subbing vanilla is intensive enough. I’ve spent an hour browsing through your site and never would have known about you had I not come across you on glutenfreefeed. It’s great finding recipes I don’t have to reconstruct from the ground up. Thank you.

Hi Carrie! Thanks so much! It’s funny, because I do tend to cut back a little bit on the rum since my kids tend to enjoy the cake as well! Most all of the alcohol cooks out for the most part, but that rum taste is definitely there!! This would probably not be quite appropriate for the “tee-totaler” crowd, and is probably pretty questionable for the kiddos too! LOL

This looks fabulous! i remember when I was creating a family cookbook about 10 years ago my cousin Beth submitted a “rum cake” recipe which we both giggled about since our family consists mostly of “tee-totalers”… I bet this is absolutely delish!!
